Paleta Iberico de Bellota is a dry-cured shoulder from the Iberian black pigs raised on a diet of acorns (bellota). Known for its beautifully marbled meat, this shoulder has a higher concentration of fat than the leg, which results in a more intense, savoury flavour. The meat is debones and cleaned to reveal its rich marbling, which enhances both the texture and taste.
By law, Paleta Iberico de Bellota must be aged for a minimum of 24 months. However, due to the size of the pigs, Blazquez ages their shoulders for up to 30 months, resulting in a richer, more complex flavour profile. With a smaller size and lower price point, paleta is a great way to introduce your clientele to the world of high-quality bellota ham.
Blazquez produces both 100% Iberico and 50% crossbreed Iberico hams, and the family believes—and we agree—that the 50% crossbreed produces a superior product. The 50% crossbreed combines the Iberian pig’s high-quality genetics with a more subtle flavour profile. It also has rosier flesh and more intramuscular fat, which results in a melt-in-the-mouth experience that enhances the eating quality of the ham. The family maintains two separate herds to produce this special first-generation crossbreed, ensuring the balance of the Iberian genetics is maintained.
This product is perfect for sandwiches or can be shaved over pizza to add depth and flavour. Additionally, Blazquez products have virtually no wastage, making it easy to dice leftovers for use in croquettes, pasta, or as a flavourful garnish for fish, chicken, or quail. A 10g portion can elevate any dish with an unmatched kick of flavour. Pair with champagne or sherry for the ultimate indulgence.
