Jamon Iberico de Bellota is a dry-cured leg ham from the Iberian black pigs raised in the oak forests of Spain. These pigs are fed a diet of acorns (bellota), which results in meat that is both rich and flavourful. The ham is characterised by dark crimson meat with a layer of white fat. Jamon Iberico de Bellota offers a rich, buttery, and nutty aroma that carries through to its complex flavour profile. The acorn diet results in a ham that has a melt-in-the-mouth quality, with the fat breaking down at a low temperature, releasing its deep flavours.
The pigs roam over 30,000 hectares of oak forests and consume up to 10kg of acorns for every 1kg of meat, making the pigs larger and free-range. By law, Jamon Iberico de Bellota must be aged for a minimum of 36 months; however, Blazquez ages their hams for up to 48 months, resulting in an even richer, more intense flavour.
Blazquez produces both 100% Iberico and 50% crossbreed Iberico hams, and the family believes—and we agree—that the 50% crossbreed produces a superior product. The 50% crossbreed combines the Iberian pig’s high quality genetics with a more subtle flavour profile. It also has rosier flesh and more intramuscular fat, which results in a melt-in-the-mouth experience that enhances the eating quality of the ham. The family maintains two separate herds in order to produce this special first-generation crossbreed, ensuring that the balance of the Iberian genetics is maintained.
Simply slice and serve—no additional preparation is necessary to enjoy this extraordinary ham. With such a rich, intense flavour, only 20g per person is required, making it a surprisingly affordable luxury. Additionally, Blazquez products have virtually no wastage, allowing any leftover ham to be diced and used in dishes like croquettes, pasta, or as a flavourful garnish for fish, chicken, or quail.
