This integrated approach ensures unparalleled quality control and a profound connection to the land. The farm sustains approximately 650 Bruna Alpina cows, whose rich milk contributes to the cheese’s distinctive flavor and texture.
Historical Significance
Established in 1879, Valserena is celebrated as the oldest Parmigiano Reggiano dairy in Parma. For over five generations, the Serra family has dedicated themselves to preserving traditional cheesemaking practices, making Valserena one of the last true farmstead producers of this esteemed DOP cheese.
