Banderillas (Spicy Cocktail Sticks)

Traditional Basque pintxo skewers, each threaded with a lively combination of pickled vegetables — guindilla, olives, cocktail onions and gherkins, in a sharp, gently spiced brine.

Named after the small decorated darts used in bullfighting, banderillas are a fixture of the pintxo bar counter across the Basque Country and northern Spain. The vinegar cuts through rich food, the guindilla brings a slow warm heat, and the whole skewer works as a single-bite palate cleanser.

Serve straight from the jar as a pintxo alongside a cold beer, vermouth or dry sherry. Excellent perched across the rim of a Bloody Mary or dropped into a dirty martini in place of a plain olive. They also sit well on a charcuterie or conservas board, cutting through cured meats, oily fish and aged cheese.
