The name Norcia refers to the Umbrian town of Norcia, renowned for its centuries-old salumi-making tradition, particularly its skilled butchers, known as norcini. The term Cacciatori, meaning "hunters" in Italian, reflects the compact size of this salami, originally made for hunters as a portable, protein-rich snack during long outings.
The convenient cacciatori size makes it perfect for enjoying at home, whether as part of a charcuterie platter or as a flavourful topping for pizza. Its balanced spice and savoury depth make it a versatile and indulgent choice.
About the Producer
De Palma Salumi is a family-owned producer of traditional Italian-style cured meats, founded by Robert De Palma and his wife, Carla De Palma. With seven generations of salumi-making heritage, Robert learned the craft from his father, Antonio De Palma, mastering the traditional Italian techniques of slicing, spicing, salting, drying, and aging.
Originally operating from Antonio’s butcher shop in Sydney, the overwhelming demand for their all-natural, handcrafted salumi led Robert and Carla to establish dedicated production facilities in Padstow, NSW.
