Salame Norcia is one of the most sought-after salami varieties in Italy, crafted with medium-ground pork and larger pieces of back fat before being salted, spiced, and slowly fermented for up to three months. During maturation, Salame Norcia Finocchiata (Fennel) develops a natural white mould coating, similar to that found on Brie or Camembert, which adds a layer of creaminess and depth to its flavour.
The name Norcia refers to the Umbrian town of Norcia, renowned for its expert salumi makers, known as norcini. The term Cacciatori, meaning "hunters" in Italian, reflects the convenient, portable size of this salami, originally made as a protein-rich snack for hunters.
With its sweet, herbaceous, and subtly anise-like notes from fennel, this salami pairs beautifully with Camembert, crackers, and fresh pear, enhancing its delicate yet complex flavour profile. Thinly sliced, it is perfect for charcuterie boards, antipasti, or gourmet sandwiches.
About the Producer
De Palma Salumi is a family-owned producer of traditional Italian-style cured meats, founded by Robert De Palma and his wife, Carla De Palma. With seven generations of salumi-making heritage, Robert learned the craft from his father, Antonio De Palma, mastering the traditional Italian techniques of slicing, spicing, salting, drying, and aging.
Originally operating from Antonio’s butcher shop in Sydney, the overwhelming demand for their all-natural, handcrafted salumi led Robert and Carla to establish dedicated production facilities in Padstow, NSW.
