Mount Zero Freekeh – Wholegrain
Freekeh is an ancient grain made from young, green durum wheat that is harvested early, then roasted over wood fires in the traditional method to burn off the husks. This gives the grain its distinctive nutty, smoky flavour. The name freekeh derives from the Arabic word faraka, meaning "to rub", referring to the age-old practice of rubbing away the husks once dried.
After roasting, the wheat is left to dry further and is then either cracked or left whole. Mount Zero’s wholegrain freekeh retains all the grain’s structure, offering a robust texture and rich nutritional profile.
