Arguably the rarest and most exceptional sansho powder available, this vibrant green Japanese pepper has been used for over a millennium in Japan. Harvested by a small, aging community of septuagenarian and octogenarian foragers on the remote hillsides of Wakayama Prefecture, these green sansho berries are carefully dried and ground into a potent, aromatic powder.

With its citrusy, peppery aroma and characteristic numbing effect, sansho powder should be used sparingly. A pinch enhances grilled meats and fish with bright, tingling complexity.
