Ganko Tamari by Ito Shoten is an exceptional, artisanal tamari produced exclusively from premium Japanese soybeans, koji, and sea salt. Aged naturally and patiently over three years in cedar barrels that have been in continuous use for more than two centuries, this tamari embodies authenticity and tradition. Unlike mass-produced tamari—which often includes sweeteners and artificial colourings—Ganko Tamari remains pure, gluten-free, and limited in production. It features intense umami depth, lower sodium content, and higher protein levels compared to regular soy sauce. Rich, dense, and characteristically intense, Ganko Tamari imparts a unique reddish hue to dishes, making it an exceptional pairing for raw fish and adding complexity to heated culinary preparations. Use sparingly to fully appreciate its depth and nuanced flavour.

About the Producer – Ito Shoten
Established during Japan's Edo Period (1603–1868) in Aichi Prefecture, Ito Shoten began as a sake brewery, later adapting their refined fermentation skills to produce miso and tamari. Their cedar barrels, continuously used for generations, enrich the fermentation process with invaluable, naturally occurring beneficial bacteria. Tamari production constitutes less than 3% of soy sauce made in Japan, with Aichi Prefecture recognised as its primary region due to the area's specialty in soybean miso (Hatcho miso). Today, the ninth-generation owner of Ito Shoten proudly honours his ancestors by meticulously preserving traditional brewing techniques, despite their labour-intensive nature, ensuring the authenticity and outstanding quality of their products.
