Savoiardone di Fonni
Made in Fonni, high in the central mountains of Sardinia, by Tipico La Buona Sardegna. Three ingredients: 50% barn laid eggs, sugar, and flour only. No raising agents, no emulsifiers, nothing else.
The result is a longer, denser, more substantial finger than anything industrially produced. In tiramisu it absorbs slower, holds its structure, and contributes real flavour rather than just texture. Served alongside coffee or a digestif, it stands completely on its own, something a standard savoiardo simply cannot do.
This is what the savoiardi looked like before it was industrialised.
