A traditional dry-salted caviar from the Siberian sturgeon (Acipenser baerii), this Siberian Reserve Caviar delivers a delicate texture with a slightly sweet flavour and buttery notes. Aged for up to four months in 17kg mother tins, the caviar develops complexity and depth before being repacked into smaller tins just before delivery, ensuring the highest quality and freshness.
Sourced from upstream floating cages in the pristine mountain waters of Aragón, Spain, this caviar benefits from a mineral-rich environment that enhances its natural flavour. The wild-raised sturgeon are carefully monitored, with ultrasound scanning used to select female fish at optimal roe maturation. The sturgeon are then carefully released back into the water, ensuring ethical and sustainable farming practices.
