Yarra Valley Caviar’s smoked salmon caviar is a premium, innovative product highly regarded in the restaurant industry. The salmon are hand-milked for roe once per year, using a natural clove oil anaesthetic, ensuring a stress-free and sustainable process. The fish are then gently returned to their ponds, allowing them to spawn again the following year.
This caviar undergoes a unique two-stage smoking process. First, the roe is brined using red gum salt for 72 hours, enhancing its depth of flavour. Then, it is cold-smoked over local mountain ash hardwood, resulting in a delicately smoky yet clean and natural taste. The burst-in-the-mouth texture is perfectly complemented by the subtle smokiness, making this a truly distinctive caviar.
