The salmon are hand-milked for roe once per year, using a natural clove oil anaesthetic. This gentle, stress-free process allows the fish to be returned to their ponds to spawn again the following year, ensuring a sustainable and humane approach to caviar production.
Packaged on-site without any additives, this caviar is lightly salted with premium salt, resulting in bright, plump, and flawless pearls that burst with rich, clean flavour.

Yarra Valley Caviar, based in Victoria, Australia, is an Australian-owned and operated business dedicated to sustainable aquaculture.
