An outstanding cheese both in its flavor and history, Pecorino di Fossa (Pecorino of the Pit) is a unique and traditional cheese from Follonica, Tuscany. Once the wheels of Pecorino are clothbound, they are buried and aged in underground wells for 6 to 7 months at the end of summer. This practice was originally undertaken to hide the cheese from pirates who raided the area. As a result, each wheel of Pecorino di Fossa takes on varying shapes and natural molds, depending on how deep the cheese was located in the well. The aging process transforms the delicate taste of Maremma sheep's milk into a deep, intense flavor unlike any other, with a texture that is both crumbly and rich.
This cheese is a showstopper on any cheeseboard and makes for an incredible substitute for Reggiano in recipes.
