A distinctive dark sugar from Hateruma Island in the Okinawan archipelago, Okinawa Brown Sugar (kokuto) is naturally rich in minerals and antioxidants. It is made traditionally by simply boiling raw sugar cane juice. This unrefined sugar retains its deep caramel flavour, earthy mineral tones, and subtle savoury complexity.

Initially starting as a sugar trader, Murakami Syouten has evolved into a sugar processor specialising in Okinawan brown sugar. They source their renowned kokuto (black sugar) from Hateruma Island, the southernmost inhabited island in Japan, which is celebrated for its high-quality sugarcane.
