Mikawa Mirin is an outstanding example of hon mirin (本みりん), the traditional sweet rice wine essential to Japanese cuisine. Brewed using only glutinous rice, rice koji, and rice shochu, this mirin is naturally fermented and aged for two years, developing a deep amber hue, smooth viscosity, and complex flavour profile. Rich yet refined, it offers natural sweetness, gentle caramel undertones, and a rounded umami finish—qualities so polished that Mikawa Mirin can even be enjoyed as a sipping aperitif, much like a fine sake.
What is Hon Mirin?
Hon mirin, meaning "true mirin," is a traditional fermented rice seasoning developed over 500 years ago during Japan’s Muromachi period (1336–1573). Originally consumed as a luxurious sweet sake, it later found prominence as a core seasoning in Japanese cuisine due to its natural sweetness, umami-enhancing alcohol content, and glossy finish.
What sets hon mirin apart from other modern forms of mirin is its authentic brewing process and ingredient integrity:
Hon Mirin: Brewed from glutinous rice, koji, and shochu, then aged and naturally fermented (contains ~14% alcohol). Adds depth, umami, aroma, and sheen to food.
Mirin-fu Chomiryo (Mirin-style seasoning): Contains less than 1% alcohol and is typically flavoured with corn syrup or additives. A cost-effective substitute with limited depth.
Shio Mirin (Salted mirin): Similar to hon mirin but with added salt (around 1.5%) to avoid alcohol tax. Not suitable for drinking.
Mikawa Mirin belongs to the highest class of mirin—genuine, slow-aged hon mirin—and is free from any artificial sweeteners, corn syrup, or additives.
