Mount Zero Beluga Black Lentils

These striking black lentils—also known as ‘caviar lentils’ due to their resemblance to beluga caviar—are a Middle Eastern variety, now cultivated in the self-mulching, nutrient-rich soils of the Wimmera in Western Victoria.

Thanks to the region’s long, cold winters and hot, dry summers, Mount Zero Beluga Black Lentils are prized for their:

Their deep black colour makes them a visually impressive addition to grain dishes and salads, and they pair beautifully with braised meats, duck, and root vegetables like beetroot or swede.

Cooking Instructions

Rinse lentils thoroughly

Add 1 cup (250g) lentils to 3 cups (750ml) water in a saucepan

Bring to a boil, reduce heat, and simmer for 20–25 minutes, stirring occasionally, until just tender
