These striking black lentils—also known as ‘caviar lentils’ due to their resemblance to beluga caviar—are a Middle Eastern variety, now cultivated in the self-mulching, nutrient-rich soils of the Wimmera in Western Victoria.

Cooking Instructions
Rinse lentils thoroughly
Add 1 cup (250g) lentils to 3 cups (750ml) water in a saucepan
Bring to a boil, reduce heat, and simmer for 20–25 minutes, stirring occasionally, until just tender
