About the Producer

La Tortilleria is an Australian producer specialising in authentic Mexican tortillas and corn-based products, made using traditional nixtamalization techniques. Based in Victoria, La Tortilleria is committed to using 100% Australian-grown corn and traditional stone-grinding methods, ensuring products that are rich in flavour and true to Mexican culinary heritage.

The company was co-founded by Gerardo Lopez and Diana Hull, both deeply passionate about preserving authentic Mexican food traditions.

Gerardo Lopez, a proud Chilango (native of Mexico City), moved to Australia in 2009 and was frustrated by the lack of authentic Mexican cuisine. Determined to bring real Mexican flavours to his new home, he co-founded La Tortilleria. Beyond his culinary expertise, Gerardo is an avid adventurer, having summited Mount Everest in 2009, becoming the 26th Mexican to do so. He also hosted 'This is Mexico', a six-part television series on Channel 10 in Australia, and was awarded the Outstanding Mexican Abroad Award in 2018 by the Mexican Federal Government.

Diana Hull, with a background in anthropology, developed a deep appreciation for traditional food cultures while studying in Mexico City. Fascinated by the indigenous techniques of nixtamal tortilla-making, she became committed to preserving and promoting this centuries-old culinary craft. She is passionate about sustainable food systems and educating others on the cultural importance of traditional Mexican food preparation.

Together, Diana and Gerardo established La Tortilleria to share authentic Mexican cuisine with Australia, ensuring that every product reflects the bold, fresh flavours and rich heritage of Mexican food culture.
