Taleggio is a classic Italian cheese, traditionally aged in caves and washed in saltwater, in the Lombardy region.

The cheese has a strong, funky aroma and a mellow, slightly tangy flavour. With hints of nuts and fruit, the soft paste under the rind can be crumbly in the centre.
