At 55mm, this vol-au-vent moves comfortably between catering formats — equally at home as a passed canapé at a cocktail function or plated as an entrée. Fill with a classic chicken and mushroom sauce, creamy seafood bisque, rôtisserie duck with hoisin, or a rich spinach and ricotta mixture for a vegetarian option.
