The soft yellow ivory paste of the monte diavolo is smooth with a supple texture that is stuffed with crushed native pepperberries. The native pepper adds a distinctive savoury flavour to the cheese that is uniquely Australian. It is initially earthy and sweet on the front palate with a peppery smoked charcuterie flavour on the back palate.

The paste is fresh and the hints of lactic and fresh yoghurt balances the smoky savoury aftertaste that builds and lingers.
