About the Producer
Fromagerie Prayoud was build in 2023, this state-of-the-art facility replaced the former Châtel-St-Denis dairy. Despite its modern design, it maintains the traditional Gruyère-making methods. Fromagerie Prayoud sources milk from 14 farms, some of which reach up to 1300 meters in altitude during the summer.
Léonard Cavuscens, the cheesemaker, took the reins in 2021 after serving as cellar master at L’Etivaz. Recently certified as a master cheesemaker, he brings both a deep respect for heritage and an openness to innovation.
The cheese benefits from a blend of lowland and alpine milk, and the maturation process is closely supervised to bring out a bold yet balanced personality. Prayoud’s modern facilities allow precise control over each step, resulting in consistent, clean cheeses with layered flavor.
About the Affineur
Fromage Gruyère SA has been refining Gruyère AOP since 1916 and is one of the two remaining affineurs located in the Gruyère District. From its caves in Bulle (Fribourg), the company matures Gruyère AOP using traditional methods, working closely with local cheesemakers to preserve the cheese’s authentic character and regional identity.
Every wheel is aged naturally—brushed, turned, and monitored with a lot of experience—to draw out the cheese’s hallmark flavour: a balance of strength and subtlety, forged over time. Their commitment to proximity, precision, and patience ensures that each cheese reflects the terroir and time-honoured heritage of Gruyère.
