Fresh goat’s milk curds are slowly worked with a light scald to introduce sweetness, then continuously stirred to form a soft, slightly elastic curd that knits together with ease. The young cheese is washed multiple times and rested to develop a natural rind, which is then rolled in dried flowers and herbs. Matured for 5 to 6 months, Flower Power develops a rich, creamy texture with nutty undertones, grassy aromatics, and a subtle accent of native thyme.
