Florence is a seasonal, lactic-fermented goat’s milk cheese, crafted through years of expertise at Woodside Cheese Wrights. With a delicate balance of subtlety and complexity, this unique cheese undergoes a long fermentation period at gentle temperatures, resulting in an exceptionally refined flavour and texture.
Its distinctive "O" shape creates a vast surface area, allowing for a meticulous affinage process. The cheese is coated in a signature Geotrichum mould, exclusively cultivated at Woodside, giving Florence its delicate, wrinkly rind, reminiscent of intricate patterns.
As it ripens, Florence’s paste develops a gentle acidity with nuanced flavours, while a luscious, fudge-like texture forms beneath the rind. The circular shape enhances maturation, allowing the Geotrichum to permeate deeply, creating a balanced and harmonious profile.
Seasonal Availability
Available only from October to May, when the goat’s milk reaches its peak fat and protein content, ensuring optimal flavour and texture.
