Charleston (Jersey Brie)
Charleston is a flavourful, artisan Brie, crafted from Jersey cow’s milk sourced from the Adelaide Hills. Unlike standard supermarket Brie, Charleston undergoes a carefully controlled ripening process, where multiple surface moulds coexist, influencing its unique flavour and textural development.
This white-mould cheese ripens from the outside in, taking approximately six weeks to fully mature. When ripe, Charleston is soft and creamy, offering rich, complex farmyard and mushroom characters, making it a standout choice for Brie lovers.
