Widely regarded as one of Australia’s premier cheeses, the Bay of Fires Clothbound Cheddar is a testament to traditional cheesemaking artistry. Crafted by Ian Fowler, a 13th-generation cheesemaker, this cheddar embodies nearly 400 years of family expertise. The Fowler family holds the distinction of being England's oldest cheesemaking lineage, with roots tracing back to the 1600s.

In 2009, Ian and his wife, Tracey, sought new horizons and relocated their family from England to the picturesque Bay of Fires region in Tasmania. There, they established Bay of Fires Cheese, continuing the family's rich cheesemaking tradition in a pristine environment.

The Bay of Fires Clothbound Cheddar is meticulously produced using time-honored methods. After the curds are formed, they are larded and clothbound, then aged for a minimum of 12 months on pine boards. Throughout this maturation period, each cheese is hand-turned and rubbed every three weeks, fostering a unique flavour profile and texture.
