Verjus is a mild acidulant made from unripe, unfermented Chardonnay grape juice that is chilled and filtered to prevent fermentation. Softer than citrus juice and milder than vinegar, it balances sweet fruit flavours with a drying, zingy acidity. Ideal for blending with extra virgin olive oil as a salad dressing, stirring into mayonnaise, enriching winter stocks, deglazing pans, or as a substitute for white wine, lemon, or vinegar in recipes such as roast fowl.

Mount Zero Olives is a family-owned business rooted in the Wimmera/Grampians region of Western Victoria, operating from one of Australia's oldest olive groves, established in 1946.
