Tête de Moine, meaning "Monk’s Head", is a Swiss raw milk cheese with a heritage spanning over eight centuries. Originally created by the monks of the Abbey of Bellelay, this semi-hard cheese is known for its unique preparation and serving method.
Rather than being cut, Tête de Moine is traditionally scraped using a special tool like a girolle, creating delicate floral-like shavings. This method allows more oxygen to reach the cheese’s surface, fully developing its rich, aromatic flavours.

This semi-hard cheese has a smooth, creamy texture when shaved and releases complex, nutty, and slightly tangy notes, with floral and earthy undertones that intensify as it matures.
