Roquefort is revered by cheese lovers for many reasons, particularly as a pure expression of regional French food heritage. Produced under strict AOC guidelines—covering sheep breed, feed patterns, and maturation—Roquefort must be aged in the limestone caves surrounding the village of Roquefort-sur-Soulzon in France.
The Coulet family, renowned producers for over 130 years and spanning five generations, uniquely maintain traditional methods, including hand-scraping the amorge and extending the cheese’s maturation by an additional month beyond the AOC requirement, totalling four months. This meticulous care results in a Roquefort that is less salty, with a more expansive spread of delicate blue veins than other varieties. Its porcelain-white colour, fine creamy texture, and balanced salt-and-pepper finish exemplify artisanal cheesemaking at its finest.
