Los Cameros Vaca Añejo — Aged Cows Milk Cheese
Milk: Pasteurised cow's milk (100%) — single herd, Friesian breed,
Rennet: Animal (Cow)
Ageing: Minimum 12 months in underground stone cellars
Rind: Natural — mould culture, washed in extra virgin olive oil
Production: Limited edition, approximately 5,400 wheels per year

A relatively recent addition to Los Cameros, but a cheese years in the making. Inspired by the traditional long-aged Riojan Sheep and Goats, but with cow's milk. All milk comes from a single herd of Friesian cows, selected for exceptional quality. Each wheel spends a full year ageing in the cellars before release.
Appearance — A deep, dark yellow paste with small white dots — the protein crystals that form during extended ageing. The natural rind carries the familiar Los Cameros patchwork of mould and olive oil.
Aroma — Rich and inviting. Butter and toasted hazelnuts dominate, with the depth and complexity that comes from twelve months of cellar ageing.
Palate — Enveloping and sweet, with a firm texture that gives way to the satisfying crunch of protein crystals. The flavour is rounded and full.
