Los Cameros Mezcla Curado — Cured Mixed Milk Cheese

Milk: Pasteurised cow's (min. 60%), sheep's (min. 20%), goat's (min. 6%)

Ageing: 6 months

Rind: Natural mould washed in extra virgin olive oil

Rennet: Animal (Sheep)

One of the most decorated artisan cheeses in Spain and a benchmark of the Rioja region, it is a three-milk cured cheese that has won at the highest levels of international competition for many years.

Mezcla is pronounced “METH-klah”, meaning “Mixed”

Curado is pronounced: koo-RAH-thoh and means “Cured” or “Aged”


Appearance — Warm straw-yellow paste with small, even eyes. The rind is a developed patchwork of ochres, greens and browns. It is unmistakably natural.

Aroma — Earthy and herbal. Cellar depth from the mould, a grassy lift from the olive oil.

Taste — Creamy at first, building to pepper and savoury depth.

About the Producer

Quesos Los Cameros is family owned cheese producer located in Haro, a small town at the heart of La Rioja, Spain's most celebrated wine-producing region. They are one of Spain’s most highly awarded artisan cheese producers.

Milk is sourced exclusively from farms within a 120 km radius, many of which have worked with the family for generations.

Los Cameros insists on natural rinds. There are no waxes or artificial coatings — only mould, olive oil and time.

The cheeses are washed in the family’s own olive oil produced on their nearby farm. The oil washing moderates mould development, creates a natural protective barrier and adds a subtle aromatic dimension. As the cheese matures, the rind develops mould, forming a living rind of ochres, browns and greens. This signals genuine cave ageing and contributes enormously to flavour complexity.
