Goat on a Hot Tin Roof is an artisan chèvre crafted by Woodside Cheese Wrights in the Adelaide Hills, South Australia. This creamy goat cheese is made from fresh, pasteurised local goat's milk sourced from Towerview and Oskjberg dairies. The milk is pasteurised and set overnight, and the following day, the curd is ladled into cheesecloth bags and allowed to delicately drain for several hours. A small amount of salt is added, and the cheese undergoes a further draining process for ten days in a controlled environment. The cheese is then lightly rolled in a combination of chilli, saltbush, native pepperberry, and crushed Tanami apples, imparting a unique herbaceous and spicy flavour profile.
This chèvre's light and delicate texture makes it versatile for various culinary applications. It pairs exceptionally well with warm crusty bread and a drizzle of olive oil, enhancing both sweet and savoury dishes.
