This exceptional single estate dark chocolate is crafted from organic cacao grown in the heart of the Dominican Republic's Cacao Duarte region. The beans are cultivated and fermented within Reserva Zorzal, a 1000-acre bird sanctuary founded by Charles Kerchner. Dedicated to conservation, the sanctuary preserves 70% of its land as untouched forest, while the remaining 30% is used to grow cacao as a sustainable source of funding.
The cacao is fermented using a two-box system over six days, followed by careful drying on mesh-covered greenhouse decks. These post-harvest methods highlight the natural vibrancy and complexity of Dominican cacao, resulting in a chocolate with bright fruit notes, balanced acidity, and a clean, lingering finish.
