Produced in the Alpine regions of Lombardy, this cheese is often referred to as Mountain Gorgonzola, a nod to its origins and the unique environmental conditions that shape its flavor. Castel Regio’s Gorgonzola Piccante is still matured in the mountains of Bergamo, where the natural microclimate provides the ideal conditions for aging.
