Drawing inspiration from centuries-old Scandinavian tradition, Olsson’s has embraced the ancient Nordic practice of smoking sea salt over native wood fires—a technique once favoured by the Vikings. This salt is crafted using pure Australian sea salt flakes from South Australia’s Eyre Peninsula, which are slow-smoked over native River Red Gum (Eucalyptus camaldulensis) for 72 hours.
The result is a distinctly aromatic salt imbued with the earthy, smoky complexity of Australian red gum, offering an authentic and flavourful finishing touch.
