Yuzu Kosho

Yuzu Kosho is a traditional Kyushu condiment. It is a bold, intensely flavourful condiment made from fresh green yuzu peel, one year old fermented green chillies, and Japanese sea salt. It has a bright citrus aroma and flavour, savoury depth and saltiness with a balanced heat. Before packaging, the yuzu peel and chillies are carefully ground using white marble to prevent excess heat from affecting the delicate aromas and flavours.

A versatile seasoning, green yuzu kosho adds a vibrant citrus-salty-piccante punch. Stir it into mayonnaise or olive oil vinaigrettes for a bold, umami-rich dressing, or pair it with grilled meats, sashimi, scallops, and white-fleshed fish to elevate their natural flavours. We highly recommend adding a jar of Yuzu Kosho to the table side condiment service in steakhouses. It is magic how good it is with a steak.
