A Rare Full-Cycle Producer

Valserena stands out as one of the few remaining farmstead (full-cycle) producers of Parmigiano Reggiano. This means that every step of the production process—from cultivating feed and raising the cows to crafting and aging the cheese—occurs entirely on their 430-hectare family-owned farm in Gainago di Torrile, Parma. This integrated approach ensures unparalleled quality control and a profound connection to the land. The farm sustains approximately 650 Bruna Alpina cows, whose rich milk contributes to the cheese's distinctive flavor and texture.

Historical Significance

Established in 1879, Valserena is celebrated as the oldest Parmigiano Reggiano dairy in Parma. For over five generations, the Serra family has dedicated themselves to preserving traditional cheesemaking practices, making Valserena one of the last true farmstead producers of this esteemed DOP cheese.
