Made from cow’s milk and matured to develop both structure and depth, it balances richness with restraint—avoiding the aggressive salt and sharpness seen in many traditional blues. It is an approachable artisan blue cheese, with consistency and versatility appealing to a wide audience.

Appearance

Compact, slightly crumbly paste with a pale ivory base, marbled with fine, even blue-green veining. The rind is natural and understated, allowing the interior to take focus.

Aroma

Clean and inviting. Notes of cultured cream, fresh butter, and damp cellar, with a mild earthy lift rather than pungency.

Texture

Initially firm and slightly crumbly when young, softening with age into a creamy, almost fudge-like consistency. The breakdown on the palate is smooth and even, without excessive moisture or chalkiness.
