Smoked Speck/Pancetta – Whole (Approx. 2.5kg)
This German-style speck is made from Australian pork belly that has been brined and cold-smoked. It must be cooked prior to eating. It is sometimes referred to as smoked pancetta. In France, a similar product is known as poitrine fumée (smoked pork belly) or lard fumé when prepared as lardons.
Ideal cut into lardons and crisped, rendering the fat and adding a crisp, savoury note to dishes. Also well suited to slicing thinly and using to wrap terrines.
