Shropshire Blue

<p style="margin-bottom:1em;">Shropshire Blue is one of the great British blues, and Colston Bassett, making cheese in the Vale of Belvoir since 1913, is widely regarded as its finest producer.</p>

<p style="margin-bottom:1em;">Think of it as Stilton's more colourful sibling. Made in the same tradition but with one striking difference — the addition of annatto, a natural dye that gives the paste its vivid deep orange colour. Beneath a rugged natural rind, the paste is rich and creamy with generous blue-green veining. The flavour is bold and tangy with a peppery edge, fuller and sharper than Stilton but with the same characteristic creaminess on the finish.</p>

<p style="margin-bottom:1em;">A cooperative dairy founded in 1913, Colston Bassett draws milk daily from local farms within 1.5 miles of the dairy, and every cheese is made entirely by hand using recipes passed down through generations. Their Shropshire Blue has won two Great Taste stars and multiple medals at the International Cheese Awards.</p>
