Harvested by a small, aging community of septuagenarian and octogenarian foragers on the remote hillsides of Wakayama Prefecture, these green sansho berries are carefully dried and ground into a potent, aromatic powder.

With its citrusy, peppery aroma and characteristic numbing effect, sansho powder is a powerful seasoning that should be used sparingly. A pinch enhances grilled meats and fish, lending a bright, tingling complexity that lingers on the palate.
