Sarda Formaggi Goceano is a benchmark example of Pecorino Romano DOP: bold, assertive and uncompromising, yet underpinned by the quality and complexity of Sardinian mountain sheep’s milk. It stands clearly above commodity-grade Pecorino Romano in both depth and character.

The name Goceano refers to a central-northern region of Sardinia. Despite its name, Pecorino Romano is now produced predominantly in Sardinia, which has become the most significant production area due to the island’s long pastoral history and strength in sheep’s milk production.

Each wheel carries the official mark of the Consorzio per la Tutela del Formaggio Pecorino Romano, guaranteeing compliance with strict production regulations, defined quality standards, and full DOP authenticity.


Appearance

Hard, compact wheel with a pale straw-coloured paste and minimal eye formation. The structure is dense and uniform, purpose-built for grating and shaving.

Aroma

Clean and assertive, with pronounced sheep’s milk character. Dominant savoury and saline notes are balanced by subtle dairy sweetness from high-quality mountain milk.

Texture

Very firm and dry with a brittle, crystalline structure. Breaks and grates cleanly, making it ideal for fine grating or thin shavings.

Flavour Profile

Sharp and distinctly salty on entry, delivering the classic intensity expected of Pecorino Romano. Beyond the salt, there are nuanced flavours of concentrated sheep’s milk, gentle lactic sweetness, and a lingering savoury depth that reflects careful maturation and mountain pasture milk. The finish is long, powerful and savoury, with a persistent saline tang and umami richness.


Culinary Use

Primarily a hard grating or shaving cheese. Essential for classic Roman dishes, most notably Cacio e Pepe, where no substitute delivers the same balance of salt, sharpness and structure. Also excellent over pasta, vegetables and legumes, or shaved sparingly as a seasoning cheese.


About the Producer

Sarda Formaggi was founded by the Mura and Saba families in 1963. Today, the company collects milk directly from shepherds in the mountainous north-east of Sardinia, producing and maturing a range of traditional sheep’s milk cheeses. Herd sizes range from as few as 30 sheep to around 300, ensuring close control over milk quality and strong links to local pastoral traditions.
