This luxuriously creamy buffalo milk cheese is infused with a special blend of smoky bush tomato. The process begins with a traditional lactic set, similar to yoghurt, and once drained, the cheese is infused with a mixture of smoked native bush tomato and native pepperleaf. The cheese is lightly seasoned with salt and aged for 12 days, then carefully portioned by hand into jars. Each jar is filled with a native ingredient spice mix and a blend of vegetable oil and Coriole Vineyards olive oil, enhancing the rich, decadent flavour profile.

The tiny bush tomatoes are hand-harvested, gently smoked, and blended with native pepperleaf, creating a distinctive and flavourful cheese. This cheese is the perfect vehicle for showcasing globally sought-after native Australian ingredients.
