Certeza means "certainty" in Spanish — a confident name for a cheese the Gómez Moreno family have been perfecting for over a century. Curado denotes the official DOP ageing classification for Manchego cured between three and six months, and it is exactly where this cheese finds its character.
Certeza Curado DOP Manchego is a true farmhouse cheese, made by hand on the Gómez Moreno family's own farm in Herencia, Ciudad Real. The same family breeds the sheep, milks the herd, and makes the cheese — four generations of production, with own-farm milk from pasture to wheel.
What sets Certeza Curado DOP Manchego apart from most Manchego at this price comes down to two things: the milk and the rind. Most commercial and export-grade Manchego is made from bought-in milk and sealed with paraffin wax or a food-grade plastic coating to suppress mould and survive vacuum packaging. Certeza Curado DOP Manchego is made entirely from the family's own herd and carries a natural rind, brushed with olive oil in the traditional way and left to breathe throughout the six-month cure. Where a sealed rind ages the cheese in an oxygen-free environment, a natural rind allows the paste to exchange air with the cellar, and that is where complexity develops: the intense aroma, the layered bouquet, the long finish. Both differences — the farmhouse milk and the natural rind — show clearly in the flavour and the presentation of the finished wheel.
