These Mediterranean caught Sardina pilchardus as regarded as the finest sardine species for conservas, valued for flavour, texture, and natural fat balance. Caught in the Mediterranean Sea by small-scale coastal fleets, the fishery operates under strict seasonal and quota controls to ensure responsible resource management.
Only the smallest sardines (Sardinillas) are selected, delivering a more delicate bite and finer texture. Each sardine is cleaned by hand, one by one, then lightly toasted before being preserved in olive oil.
