Galician Mussels in Spicy Escabeche with Olive Oil
These large plum mussels (8-12 per tin) are Mytilus galloprovincialis, a species cultivated worldwide but regarded at its best in the Galician Rías, where cold Atlantic waters and one of the world’s richest plankton reserves produce mussels with greater depth of flavour, juicier texture, and fuller meat.
Farmed using bateas—traditional floating rafts anchored in the rías—the mussels grow slowly and naturally in constantly renewed tidal waters. Once harvested, they are lightly fried to set texture and preserve integrity, then finished in a spicy escabeche balanced with olive oil, delivering warmth and acidity without overpowering the mussel itself.
Suitable for tapas, seafood boards, salads, or simple plated starters. Serve at room temperature to allow the escabeche to open up.
