About the Producer

La Casa Del Formaggio was founded in 1988 in Adelaide by Gerardo and Rosa Cicchiello, whose families emigrated from the Benevento region of Italy in the 1960s. What began as a small continental deli soon evolved into a cheesemaking business, with Rosa using her traditional ricotta recipe from Italy.

Now led by the second generation, with Claude Cicchiello as Managing Director since 2000, La Casa employs over 150 people and has become one of Australia’s leading producers of Italian-style fresh cheeses.
