About the Producer
Bodegas Toro Albalá is a prestigious family-run estate based in Aguilar de la Frontera, in Spain’s Montilla-Moriles DOP. Founded in 1922 by José María Toro Albalá, the winery is globally celebrated for its vintage Pedro Ximénez wines, matured in an expansive cellar built from a former power station.
Drawing on its winemaking heritage, Toro Albalá has become a benchmark producer of traditional vinegars, using the same Pedro Ximénez and Oloroso wines that define their cellar. Their vinegars are aged in a solera of over 1,000 oak butts, with select expressions spending decades in barrel.
