About the Producer

Bodegas Toro Albalá is a prestigious family-run estate located in Aguilar de la Frontera, at the heart of Spain’s Montilla-Moriles DOP. Established in 1922 by José María Toro Albalá, the bodega is world-renowned for its vintage Pedro Ximénez wines, some aged for decades in vast underground cellars converted from a former power station.

With deep roots in winemaking, Toro Albalá crafts PDO-certified vinegars from the same Pedro Ximénez and Oloroso wines that define its legacy. Aged in a solera of over 1,000 oak barrels, their vinegars are prized for their aromatic complexity, balance, and longevity.
