Real Dutch Gouda gets its character from a single step: during making, the curds are washed in hot water, driving out moisture and caramelising the milk sugars. That sweet, toffee-like quality deepens with age — and after 12 months in the care of Van der Heiden Kaas, one of Holland's finest affineurs, it's at its most satisfying.

Beneath the wax is a deep golden paste with fine open holes and the first hints of calcium lactate crystals. Aromas of warm baked goods lead into a palate of balanced salt and sweetness, with the nutty, caramel character that defines great aged Gouda.

This cheese is part of Van der Heiden's Holland Delta line, their range of iconic Gouda classics, of which we think the 1-year-old is the sweet spot.
